Notes
COOKING USAGE:
Use 2 tablespoons for every pound of uncooked meat/poultry/fish/legumes. This recipe gives roughly 110 mg Sodium per 3 oz.
If on a low sodium diet, only include sodium in main dishes, avoid salted snacks and commercially made seasonings and condiments like ketchup, mayo, mustard and barbecue sauces. Also note that breads and crackers also contain significant amounts of sodium.
Instead of commercially made condiments and seasonings, create reduced sodium versions (e.g. use a low sodium tomato sauce instead of ketchup). If on a very low sodium diet, then omit adding salt or sodium containing ingredients altogether as some foods (e.g. poultry naturally contain sodium).
This recipe provides a low sodium seasoning option. However, if your diet includes sodium restrictions, we recommend that you check with your Dietitian or Nutritionist for specific seasoning guidelines.
NOTE:
Depending on the flavour that you like, you may add any of the following:
½ scotch bonnet pepper, minced (as desired)
1 tsp of ground pimento
½ medium sweet pepper, diced
2 inches turmeric (gives a curry flavour) but may stain items
1 teaspoon vinegar
