- 6 medium Tomatoes plum
- ¾ cup Water
- ¾ cup Pineapple diced
- ½ cup Onion diced
- ⅓ cup Sweet pepper diced
- 2 cloves Garlic
- 1½ tbsp Apple cider vinegar
- 1 tsp Tamarind juice
- ¼ cup Honey
- 2 tbsp Molasses
- 2 tsps Thyme powder
- 1 tsp Paprika
- 1 tbsp Pimento ground
- 1½ tsp Ginger grated
- 1 tsp Black pepper
- ½ tsp Cloves
- ¼ tsp Salt
Add ingredients in a blender and blend until smooth.
Add puree to a sauce pot over medium heat and bring to a gentle boil, stirring occasionally.
Stir frequently for about 15 minutes or until the sauce at your desired consistency..
Taste and adjust for flavour and consistency by adding more spices, pineapple puree or water. Lasts up to 1 week if stored at the back of the fridge. 2 tbsp is a serving.
