Ingredients

  • ¾ cup all purpose flour
  • ¾ cup whole wheat flour
  • ½ cup oats
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp salt
  • 3 medium eggs
  • ½ cup sugar
  • 4 very ripe bananas
  • 2 tsp vanilla essence
  • ½ cup coconut oil
  • 1 tsp cinnamon

Instructions

  • Preheat the oven to 180°C. In a medium bowl, combine the flours, oats, baking soda, baking powder, salt and cinnamon.
  • In a large bowl, cream together the eggs and sugar. Stir in the mashed bananas, vanilla essence and oil. Add the dry ingredients, a third at a time, until combined.
  • Pour the batter into a 9-by-5-inch loaf pan. Bake for about 55 to 70 minutes or until a toothpick comes out clean. Cut into 10 slices. Recommended serving is 1 slice.
