- 1 lbs snapper washed and preseasoned in salt, ginger, garlic, onion and black pepper
- 1 cup water
- ¼ cup lime juice
- ¾ cup coconut milk
- 2 stalks escallion chopped
- 1 medium onion chopped
- 4 cloves garlic minced
- ½ cup carrot strips
- ½ cup tomato diced
- ½ cup sweet pepper diced
- 1 tsp black Pepper
- ½ tsp thyme
- ½ tsp Paprika
- ½ tsp salt
- ½ tsp pimento
- ½ tsp Ginger grated
- ½ teaspoon scotch bonnet pepper, diced
Preseason fish with all of the salt and ginger and half of the other seasonings (garlic, onion, thyme and black pepper),
Heat coconut milk in a sauce pan and saute the onion garlic, scallion, thyme, paprika and tomato.
Add water, sweet peppers and scotch bonnet pepper stirring until pot comes to a boil.
