- 14 cups water
- 2 cups red peas cooked
- ½ lb pumpkin cubed
- ½ lb sweet potato diced
- ¼ lb yam diced
- 2 cups coconut milk
- 1 cup carrot diced
- 1 whole chocho finely diced
- 10 stalks escallion crushed
- 4 cloves garlic finely diced
- 1 tablespoon celery
- 16 whole pimento berries
- 6 sprigs thyme
- 1 whole scotch bonnet pepper
- 1 inch piece of ginger finely diced
- 1 teaspoon salt to taste
- ½ lb Chicken Breast
In a large pot on medium heat, bring water to boil. Add red peas, garlic and pimento berries.
Add the yam, cocoa, sweet potato, pumpkin, carrot and chocho. Cover the pot and leave for 20 minutes.
Add the coconut milk, then make and add the oatwheat spinners.
Add the remaining ingredients and allow to simmer for 30 minutes. During this period, monitor the pot by stirring to check for desired consistency and to prevent burning. Add water and additional spices as desired.
