- 1 tbsp Olive Oil
- 125 g Sardines (1 tin), in water or oil drained
- 1 tbsp Curry Powder
- 2 tbsp turmeric juice or whatever amount is ideal for you
- ½ cup diced onion
- 3 cloves garlic minced in salt
- ½ cup red sweet peppers sliced
- 2 sprigs thyme
- 1 tsp salt
- ¼ tsp Scotch bonnet pepper minced
Heat olive oil in large saucepan then add curry powder and stir until fully incorporated. Add onion and sweet peppers and sauté for 5 minutes until softened.
Stir in turmeric juice, garlic and ginger.
Add sardines and pepper and fully incorporate.
Let simmer about 2 minutes or until the stew reaches the desired consistency.
