Curried Sardines

Ingredients

  • 1 tbsp Olive Oil
  • 125 g Sardines (1 tin), in water or oil drained
  • 1 tbsp Curry Powder
  • 2 tbsp turmeric juice or whatever amount is ideal for you
  • ½ cup diced onion
  • 3 cloves garlic minced in salt
  • ½ cup red sweet peppers sliced
  • 2 sprigs thyme
  • 1 tsp salt
  • ¼ tsp Scotch bonnet pepper minced

Instructions

  • Heat olive oil in large saucepan then add curry powder and stir until fully incorporated. Add onion and sweet peppers and sauté for 5 minutes until softened.
  • Stir in turmeric juice, garlic and ginger.
  • Add sardines and pepper and fully incorporate.
  • Let simmer about 2 minutes or until the stew reaches the desired consistency.
